Dinner Day 2

Dinner for day 2 was inspired by a deep want for Rubios but the fried fish and tortilla is no buenos, so I improvised

Grilled fish lettuce wraps with chipotle cream sauce and avocado relish.

2 romaine lettuce leaves
1 pound fresh cod

Chipotle sauce
1/2 can coconut milk
Small scoop sour cream or greek yogurt
3 chipotle peppers (I rinsed them because unbeknownst to me they have wheat flour in the sauce)
Blend until creamy

Avocado relish
2 avocados
4 tomatillos
Finely chopped jalapeno
1/2 cucumber
1/4 cup lemon juice
Pepper to taste
Cut up all the veggies, mix it and eat it

Both of us were full after this and we didn't even miss the tortilla. We also made a simple spinach salad

Our First Post

Well its day 2 of me and Mariahs new life style. We have both vowed to lose a designated amount of weight and if we meet our goal we are going on a three day cruise hopefully to Canada (but Im open for ideas)

Together me and Mariah are vowing to go primal/paleo. Ive tried it before but have always fallen short due to lack of willpower and support. Mariah always vowed to never go paleo (she is a pasta and carb addict) (as am I haha) so together we are going to help each other kick our addiction to processed junk.

Join us on our journey, we will write this blog together, posting updates, recipes, and pictures...and hopefully pictures of us in Canada

Corbin and Mariah
